Chocolate Pancakes

So, this Saturday, I was whipping up some pumpkin pancakes and thought…. hm…. “maybe I can add some cocoa powder and a little stevia and make little chocolate cakes!”

Chocolate Pancakes

Ingredients:

1/3 cup oat flour (I used Bob’s Red Mill Gluten Free)

1/2 cup canned pumpkin (not pumpkin pie mix)

2 TBSP unsweetened cocoa powder

a pinch of salt

2 packets of Truvia OR 2 TBSP of Stevia in the Raw OR a few drops of your favorite liquid stevia

1/2 tsp baking powder

1 cup egg whites from the carton (or 4 egg whites)

Directions:

Stuff 001Place oat flour, cocoa, baking powder, salt and stevia in a bowl and mix well. Slowly add the egg whites and pumpkin and whisk until fully combined. Let sit for a minute or so to allow the baking powder and the salt to work their magic. Meanwhile, heat a skillet or nonstick pan and spray with a little cooking spray.  Pour batter in the pan to make 3 pancakes. Once the bubbles form, flip to cook on the other site.

 

 

 

I ate one before the gym and then the other two after!  They were really good without any toppings.  BUT, you could add anything that you like – sugar free syrup, yogurt, a little low sugar strawberry jam would be great, etc.
